Papa Joe’s Lil’ Strip

Don’t be intimidated by the thickness of the cut – perfect for large barbecues in the summer while watching the sun set over the Front Range.


Original recipe makes 4-6 servings

3  1½ - 2 inch Thick New York Strip Steaks

1 Cup Papa Joe’s Little Chalet

3 Tbsp. Worcestershire Sauce

Salt and Pepper to Taste





  1. Season both sides of steaks with Salt and Pepper to taste.  Mix together Papa Joe’s Little Chalet and Worcestershire Sauce.  Place steaks in a sealable bag or container and pour in mixture.  Marinate for at least 8 hours or as long as overnight in refrigerator.
  2. Bring steaks to room temperature (about 2 hours) and grill approximately 9 minutes on first side and 6 minutes on second side for rare to medium-rare.  Use a meat thermometer and standard meat temperature guidelines for desired doneness.  Let rest for 10 minutes and slice into ¼ inch strips.  Serve immediately.
