Little Chalet Roasted Potatoes

Made in the original Swiss Chalet restaurant beginning in 1945, these potatoes are packed full of flavor and complement any meal!


Original recipe makes 4-6 servings

3 lbs. Yukon Gold Potatoes, rinsed and cubed

1/2 cup Papa Joe's Little Chalet

1 Tbsp. fresh Rosemary, chopped

Salt and Pepper to taste



  1. Preheat oven to 425°F.
  2. Place potatoes in a large saucepot and cover with cold water.  Add 1 tablespoon of salt and 2 tablespoons of Papa Joe's Little Chalet Dressing.  Bring to a boil, reduce to a simmer, and cook until exteriors are tender, about 5 minutes.  Potatoes should show a slight resistance when poked with a paring knife or fork.  Drain potatoes and transfer to a large bowl.
  3. Add remaining Papa Joe's Little Chalet Dressing to bowl with potatoes.  Season with salt and pepper to taste, and toss until well coated.  Scrape the edges and tops of the potatoes with a fork to create fluffiness.  Place potatoes evenly in a 9x13 casserole dish and sprinkle rosemary over potatoes.  Place potatoes in pre-heated oven and roast for 1 hours.  Serve immediately.
